Frammento di CRAIE A BELEMNITES lo speciale sedimento gessoso di origine marina, che costituisce e caratterizza i terreni della Champagne, il cui fossile guida è appunto il rostro di Belemnita quadrata (una sorta di calamaro antico).

Il sedimento, dello spessore di alcune centinaia di metri, deriva dalla progressiva e completa evaporazione di un mare preistorico (che copriva tutta la regione dellIle de France) ed è coperto da un sottile strato di terreno fertile.

Le cantine della Champagne sono scavate nella craie, cheaffiora in alcune zone scoscese della regione.

La craie ha una funzione importante per le vigne, perché assorbe lumidità, la cede lentamente alle radici delle vigne ed i minerali che la compongono, donano alle uve le caratteristiche particolari che rendono lo Champagne un vino unico, irripetibile e di grande qualità.

Il lembo qui fotografato è stato da me raccolto personalmente (con lautorizzazione dei proprietari) durante una visita nelle cantine della Maison boutiques Ruinart, tra le più antiche di Reims e, a detta di molti, le più affascinanti ed emozionanti visitabili oggi: concordo pienamente con il giudizio!
